Koshary
Koshary is a popular Egyptian cuisine that dates back to the 19th century. It consists of rice, macaroni and lentils and is topped with a spicy tomato sauce and is garnished with chickpeas and friend onions. The Abou Tarek restaurant in downtown Cairo specializes in the dish and this recording was captured during the busy lunch rush.
